A simple, rustic salad that rescues stale bread and transforms it into something extraordinary.

Ingredients

2 Large Tomatoes, chopped
½ Red Onion, thinly sliced
¼ cup Extra Virgin Olive Oil
1 handful fresh Basil, torn
Salt & Black Pepper to taste
3 cups stale Whole Grain Bread, torn into chunks
¼ cup Black Olives, pitted
1 tbsp Red Wine Vinegar
1 handful of fresh Mint, torn
